Danny did a cooking demonstration at the Redcliffe Festival's Seaside Kitchen on Sunday 18th September- here are the recipes and some photos from the day.

SNAPPER WITH GRILLED VEGETABLE SALAD
Caramelised Chardonnay Vinegar
Snapper Fillet with skin on
Teaspoon Fennel Seeds
1 small eggplant
1 red capsicum
1 red onion
1 bunch asparagus
1 punnet grape tomatoes
Mesclun Salad Leaves
Chardonnay Vinegar or similar

KING PRAWNS WITH A LIME & CHILLI DRESSING ON A SPRING ASIAN SALAD
Fresh green King Prawns
Lime Juice
Long Red Chilli (optional)
Caster Sugar
Soy Sauce
Mirin
Sesame Oil

SALAD:
Wombok
Snowpeas
Cucumber
Red Capsicum
Vietnamese or Garden Mint
Coriander
Bean Sprouts
Fried Shallots/Sesame Seeds
